In 2017 we invested in partnership in a small farm and mill just outside of Espírito Santo do Pinhal in the state of São Paulo, Brazil. The farm, Fazenda Santana, sits at about 900 meters above sea level, is planted with mostly yellow bourbon. It has a state of the art wet-mill on the farm, which controls the quality of processing to a much higher standard than a typical Brazilian farm. The result is simply good coffee. We use coffee from this farm as the backbone to many of our popular blends.
This particular microlot from the 2020 harvest is “red honey” that won first place in the São Paulo’s best cup competition. In the “red honey” process the ripe cherries are de pulped, then a minimal amount of mucilage is washed off from the parchment, leaving most of the mucilage layer adhered to dry on the parchment. This lot then spent 1 day drying on cement patio, then finished drying for 8 more days on African style raised beds.
The cup is very sweet, creamy, and mellow with a juicy malic acidity. You’ll find flavors of caramel, apple, honey, vanilla, hazelnut, nougat, vanilla and milk chocolate. A great coffee to ease into. We find it to be versatile coffee as well, brewing a delicious cup of filter coffee or shot of espresso.
