We love washed coffees from Ethiopia! As the birthplace of Coffea arabica, Ethiopian coffees are among the most varied and distinctive in the world. The flavors of the best are vibrant and the cups expressive.
Guji Uraga comes to us from Southwestern Ethiopia. It’s here that a group of about 600 smallholders come together at the washing station of Feku Jiberil to process their coffees. The cherries are sorted and pulped, the beans are fermented for 36 to 48 hours and then washed. The wet beans are placed on raised drying beds in thin layers and turned every 2 to 3 hours during the first few days of the drying process. Depending on weather, the beans are dried for 10 to 12 days. All this attention to detail shows in the cup.
Where naturally processed coffees are more overtly fruity, this excellent washed example highlights the more delicate and floral qualities. Highwire Co=Founder and coffee buyer Eric Hashimoto selected this coffee for its jasmine aroma with citrus notes, smooth texture and sweet finish.
