The essence of our Tarrazú Hot Springs coffee is derived from its unique processing method. The process starts in the Tarrazú region with hand-picked coffee at its peak ripeness. The coffee is then delivered to the San Diego wet mill for further processing. In the mill the coffee undergoes a patented fermentation process with volcanic mineral water. During the fermentation process, the thermal spring water and wet parchment interact in a unique symbiosis. The hot water accelerates and enhances the mucilage removal resulting in a superior cup clarity and the natural minerals are absorbed by the coffee. In the cup, the minerals absorbed and natural acids from the coffee create a wonderful and complex experience. The coffee flavors are emblematic of a Tarrazú, but with singular spicy notes such as pepper and black currant.
