México — San Felipe

Our Mexico San Felipe comes from the Rancho San Felipe farm. The De Gaspern family has been running it in the Crdoba region of Veracruz, Mexico since 1924. They bought the first machines for processing their coffee cherries in the 1980s in order to industrialize the farm piece by piece. Over the years, the family built up a network of farmers from the region who deliver their freshly harvested coffee cherries to the ranch to have them sorted, dried and made ready for transport.The descendants run the farm today in the third generation and have set themselves the goal of producing specialty coffee of great quality and offering fair, transparent conditions for the producing farmers. They are constantly tinkering with their processing methods in order to expand and improve them. Today, in addition to producing dry and washed coffees, the family is experimenting with fermentation methods to offer a wider range of green coffees.The washed green coffee that we bought develops a slightly nutty taste profile with a pleasant sweetness and a well-balanced acidity with notes of citrus fruits, milk chocolate and macadamia nuts after roasting.Varietal: Hybrid Sarchimor, Catimor
