We are now on year five of buying coffee from Oscar and Francisca Chacn, and anyone who has tasted this coffee in previous years knows what makes their Costa Rican micromill so special. They are known for being the first to develop natural processing methods in Costa Rica after a 2008 earthquake left them without the water needed for standard processing methods. Since then they have been producing some of the best natural coffees, not just in Costa Rica, but in the entire world.This coffee kicks down the door with its big, juicy, fruit forward flavor, but will still tuck your palate into bed and kiss it on the forehead with its cocoa undertones and surprisingly clean finish.This years crop has the same sweet berry notes we love, with the addition of black cherry depth and cocoa notes as the fruit flavors dissolve.## More About This CoffeeThe Las Lajas farm is nestled in the foothills of the Poas Volcano, located outside the town of Sabanilla in central Costa Rica.The name Las Lajas comes from the Spanish version of an Arabic word for the indigenous-crafted stone artifacts found on the farm when it was first planted. In total, 38 hectares of land are divided into several parcels, each of which grow various shade tree species and create unique micro-climates. In addition, different lots process coffee differentlysome naturally, others either honey or washed. Las Lajass farming diversity allows the farm to create several distinct products with different characteristics all within a contained area. There is a rich tradition of coffee farming in the Chacn family: generations have owned and produced coffee on their land for more than 80 years.
