Our newest Colombian offering is an exclusive from Los Alpes in Huila. Composed of the elusive Pink Bourbon variety - a hybridization of red and yellow Bourbon - this lot underwent a honey process.
To achieve a honey process, the coffee cherries are depulped. Instead of being washed, the sticky mucilage is left on the coffee seed and moved to raised beds to dry. This process impresses fruity qualities and a softer mouthfeel into the coffee.
This lot features flavors of purple grape and Rainier cherry with a dark caramel sweetness. Floral rose hip and spiced cider aromatics balance dried fruit notes in the aftertaste.
