Estate - pronounced ‘Esstartay’ is the third in our Four Seasons Espresso Collection. I had wanted to create an espresso typical of the blends found in the Southern reaches of Italy and specifically around Napoli. This is the home of lever machines and dark, rich espresso. Being a much poorer region in Italy’s history, the darker roast tended to hide flaws and compensate for cheaper beans. I sought to reproduce the much richer flavor using good quality arabica beans, and this has resulted in strong cocoa notes with a very full body and mouthfeel. This espresso works well in the classic southern versions of Cappuccinos and Macchiatos.
