From Nariño, Colombia: Las Frutas at 1800 MASL, is solely composed of Caturra trees from 32 neighboring producers in the municipalities of La Union and Cartago. To achieve a fruit-forward, clean profile, the cherries undergo an extended, double fermentation. An initial 18-hour fermentation is done with the cherries soaking intact, skin and mucilage still on the seed. The seeds are then milled and fully washed to undergo a second 18-hour fermentation.
