This unique coffee is from Cordillera de Fuego, a farm in Tarrazu at 1750MASL. The founder and owner, Luis Campos, has been experimenting with different coffee processing options over the past 10 years. The resulting process - the Termico - is absolutely a game changer. They take the super sweet cherries (Caturra and Catuai varietals) at their ripest and then heat the semi-washed coffee during the fermentation process, enhancing the sweetness of the coffee. Pretty amazing stuff.
The farm is also part of NAMA (Nationally Appropriate Mitigation Actions) with the objective as a group to reach reduction emissions of green house gases within the coffee sector. One of the biggest projects they have done is the installation of solar panels, with these panels the main office is able to run off of 100% solar energy plus the solar panel also supply more than 50% of the energy for the wet mill.
