The Trufala blend is our seasonal espresso blend wherein we’ll blend two coffees from the same origin to give the coffee some depth of flavor. It’s our take on a “single origin espresso,” a way of giving the espresso some depth of flavor while retaining the bits of origin that make it special.
Of our espresso blends, this one is optimized to be used in smaller milk drinks as it is a brighter, lighter and more delicate espresso that might not be great in lots of milks and syrups.
This latest iteration of the Truffala is a blend of two El Salvadorian coffees. Well, the same El Salvadorian coffee, but processed in two different ways. We took the incredible coffees from Divina Providencia that we’ve had on filter for a few months, blended them together (washed and natural) and boom - our new Trufala blend!
This is from one our favorite producers - the Silvas of Sicafe fame. We try to visit the awesome people at Sicafe every year and every year we’re always impressed by them. This farm, Divina Providencia has been in Rafael’s family for a very long time, passed down through several generations on his mother’s side. This farm was one of Rafael’s mother’s babies. She took an immense care for this property and thought it should stay in the family for generations to come. As Rafael tells us, his mother, Eve Thelma Hoff, would walk through this farm every afternoon when she was in Apaneca.
Growing coffee at 1450masl Apaneca, this farm has both a unique micro-climate (covered in dense fog every night) and nutrient-rich soils (clay loam) that makes growing high quality coffee an easy task. They grow 100% Bourbon on this farm.
